Focus: Food Safety Extension Specialist

Responsibilities
  • Devleloping outreach and training materials centered on food safety for the food industry, food handlers, and consumers
Educational & Research Programs
  • Extension activities: Food Safety Certification Course, Domestic Kitchen Workshop, Better Process Control School
  • Research: Mechanisms of adaptation for foodborne pathogens, Microbial ecology of foodborne pathogens, Novel inactivation and detection methods for foodborne pathogens and spoilage organisms.

Biographical sketch

Dr. Critzer is an Assistant Professor at the University of Tennessee Department of Food Science & Technology. She is the Food Safety Extension Specialist for the department and her outreach activities focus on improving the food safety knowledge of manufacturers, food handlers, and consumers. Her research interest center around mechanisms of adaptation for foodborne pathogens, microbial ecology of foodborne pathogens, and novel inactivation and detection methods for foodborne pathogens and spoilage organisms
